This fabulously nostalgic, amazingly authentic vegan eggnog recipe will please everyone! I sweetened it with dates, which offer plenty of sweet, a sweet that is nutritious rather than empty, which means that it is good for you too. Delicious by itself, warm, cold, blended with coffee or matcha for a peppy pickup, and of course, you can also add your favorite spirit for a delightful holiday toddy.
Vegan Eggnog Recipe:
- 1 can coconut milk
- 3 cups cashew milk (I use homemade**)
- 4-6 pitted dates
- 1/4 tsp salt
- 1 tbsp vanilla
- 1/4 tsp cardamom
- 1 tsp nutmeg
- 1-3 droppers of Salvarae CBD Drops
Blend all ingredients on high until smooth. Enjoy heated or cold. To enjoy warm, heat on low stirring occasionally to prevent burning. Delish with coffee or matcha, nourishing cacao, added to oatmeal, spike if desired with brandy or bourbon.
**Homemade Cashew Milk
- 1-2 cups cashews depending on how thick creamy you like
- 1 tbsp vanilla
- 1/4 tsp salt
Add all ingredients to blender and fill with water to max fill line. Blend until cashews are obviously well blended. Strain and jar.
